Ok. I know this is a saving blog but seriously who doesn't love a good pancake??? I just made the most incredible pancakes!!
I usually make pancake bites because, let's get real, I suck at making actual pan cakes. The batter always comes out too thick and I always burn the pancake. I'm not sure if that is altitude related or user related. Hahah! This is the recipe I use:
2 cups flour
5 tsp baking powder
4 T sugar
1 tsp salt
2 eggs
1/2 cup oil
2 cups milk
Preheat a griddle or large skillet over medium heat. Combine dry ingredients in a medium bowl, and whisk with a fork to combine. Mix eggs, oil, and milk together until well combined. Add to dry ingredients, and mix with a fork until mostly combined, with some small lumps of flour remaining.

But since I don't use a griddle I spray my mini whoopie pan pans with non stick spray and fill them up with batter.
Well, I didn't plan on posting about this, so my pan is dirty LOL but this is what I use to bake the pancakes.
Preheat oven to 350• and bake for 10-12 minutes.
Perfection.
